Morning Motivation: Strawberry Banana Chia Seed Pudding Parfait

Starting off the week with a sweet treat that has nutritious value. With most states in the US moving into yellow phase during covid-19 we want to reward everyone with a sweet treat for remaining clam and productive during the quarantine. We saw everyone working out at home and trying to remain healthy. Fitness centers remain closed so keep up with the home workouts or put your back yard to use and get out there with the kids for some jump rope time. Before you head out lets get you energized with a delicious parfait.

What You Will Need:
5.3 oz Strawberry Greek Yogurt
5.3 oz Banana Yogurt
1/4 chia seed
1/2 cup milk
1/2 cup sliced strawberries
1/2 cup sliced bananas
granola
Instructions:
Transfer the container of strawberry greek yogurt to a bowl . Add 2 TBS chia seeds and 1/4 cup milk. Stir together. then cover and refrigerate for at least 2 hours, or overnight.
In another bowl repeat process using banana greek yogurt and combine with the remaining 2TBS chia seeds and 1/4 cup milk. Stir together, cover and refrigerate for at least 2 hours, or overnight.
When the chia seed pudding mixtures have thickened, start making your parfaits in glass of choice: Layer in granola, strawberry pudding, fresh strawberries, granola. Then layer in the banana pudding, banana slices, and top with more granola. Repeat this process in the remaining glasses. Recipe can be made in mini glasses for a fun dessert, or 8oz jars for a filling breakfast.
